INGREDIENTS
2 cups large diced watermelon
1 1/2 cups blueberries
1 English cucumber cut into chunks
4 ounces feta cheese diced

3 tablespoons apple cider vinegar
3 tablespoons honey
1/4 cup olive oil
kosher salt
fresh ground pepper

INSTRUCTIONS

  1. In a large bowl, add the watermelon, blueberries, cucumber, feta and basil. Toss to combine.
  2. In a small bowl, whisk together the vinegar, honey and olive oil. Season with salt and pepper to taste.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately. 


RECIPE NOTES
Salad can be made up to 8 hours in advance. Store in the refrigerator in an airtight container until ready to serve.
